Cutting apparatus for cutting food objects
An apparatus for cutting food objects conveyed from an inlet conveyor to an adjacent outlet conveyor. A moving mechanism is operably connected to the outlet conveyor to provide movement of the inlet end of the outlet conveyor from an adjacent position. The inlet end of the outlet conveyor is moved from a position adjacent to the outlet end of the inlet conveyor to an open position and back to an adjacent position. A cutting device cuts the food objects into portions and trim. A control unit controls the moving mechanism to move the inlet end of the outlet conveyor to an open position when separating trim portions to fall as desired and subsequently instructs the inlet end the outlet conveyor to move back to the adjacent position before the next cutting to provide a support for the remaining parts of the food object.

In particular, the Subscapularis muscle may be utilized according to the instant invention as a high-end cut of meat. In an embodiment, a Subscapularis muscle will be processed into a steak via a prescribed series of cuts. The steak will, in some embodiments, be further processed by trimming fat and connective tissue as is taught herein.
FOOD PROCESSING APPARATUS AND CORRESPONDING FOOD PROCESSING METHOD
A food processing apparatus for processing food products includes a press, a control unit and an first analyzing device. The press presses the food products with specific pressing parameters. The control unit is connected to an output side of the press and sets the pressing parameters. The first analyzing device scans the food products before pressing and generates corresponding first analysis parameters of the food products which reflect product properties of the examined food product. The control unit is connected on an input side of the first analyzing device and records the first analysis parameters and sets the pressing parameters as a function of the first analysis parameters.
System and method for generating a sortation module and carcass processing options
The disclosure relates to methods and systems for carcass processing options based on a primal/subprimal weights and yield training module. In one embodiment, the methods and systems disclosed herein use automated methods to process image data, process the image data using one or more trained modules, and determine carcass processing options based on an estimated weight calculation output from the trained modules, without using a scale-based weight measurement as an input.

The process also includes advancing, via the conveyor system, the trimmings of the foodstuff to a trimmings collector, and advancing, via the conveyor system, the trimmed foodstuff out of the trimmer. The trimmer is provided on the conveyor system prior to an injector such that the trimmer performs the automatic trimming of the foodstuff prior to injecting the foodstuff with a liquid solution by the injector.
